I have always loved lime cake rolls and orange cake, so for my first blog about food I wanted to try an orange cake with an orange glaze. I love baking but when I first started I failed many times to get it right. I’m gonna blame it on the oven haha!
I enjoy baking as it helps me to relax, it also makes me feel feminine and delicate. If you are in the mood for baking a cake then try my super easy recipe below. If I can do it then so can you!
Ingredients:
Cake:
½ cup of butter
1½ cups of cake flour
2/3 cup of sugar
1/4 teaspoon of baking soda
3/4 teaspoon of baking powder
1 egg
2 teaspoons of finely chopped orange peel (I prefer it chopped with a knife rather than grated, you get bigger chunks of orange peel that gives a nice texture to the cake)
3½ tablespoons of fresh orange juice
Glaze:
1½ cups of icing sugar
3/4 tablespoon of fresh orange juice
1. Preheat oven to 180°C.
2. Mix the dry ingredients together – cake flour, sugar, baking soda and baking powder.
3. Mix the wet ingredients together – beaten egg, softened butter, orange peel and orange juice.
4. Combine the two mixed ingredients together in a mixing bowl and whisk to a nice lumpy texture. (If the texture is too smooth, then the cake will be too heavy).
5. Pour the mixed ingredients in to a baking mould and place in the oven for 35mins.
6. Allow the cake to cool for 30mins.
7. Mix the glaze ingredients together – icing sugar and orange juice, to a thick texture and drizzle over the cake allowing it to run down the sides.
8. Sprinkle some orange peel on top to finish.
My cake came out nice and wasn’t too sweet. For those who are worried about the amount of sugar contained, you can reduce the amount to 1/3 cup only.
