I saw some Lotus Roots in the market and had an idea to experiment with a new recipe.
I have used them in salads before but wanted to create a new snack. Lotus root has a lot of benefits, it is full of vitamins and fibre.
Crispy and tasty lotus root chips came to mind. I love thai herbs and spices, I always remember how my mum made cashew nuts with thai herbs for my dad as a snack to go with his beer. I’m going to adapt this recipe to my lotus root chips. If you like oriental style snacks this recipe is quick and easy to make, the ingredients are also easy to find.
Ingredients:
1 Lotus root tube
Chopped spring onion
1-2 Lime leaves
2-4 Bird's eye chilli’s (depending on how spicy you like it!)
Lemongrass stalk
Pinch of salt
1 slice of lime
3 tablespoons of extra virgin olive oil
1. Prepare the lotus root by peeling the skin then slice to desired thickness (2-2.5mm). If you cut it too thin it may cook too quick and burn.
2. Dry the lotus root chips with a paper towel.
3. Prepare the ingredients by peeling the Lemongrass and crushing it with the flat side of a knife to release the flavour, then chop the Bird's eye chilli’s.
4. Heat the oil in the pan to a medium heat.
5. Add lime leaves, Bird's eye chilli’s and Lemongrass into the pan, add a pinch of salt.
6. When you can smell the herbs cooking, add the lotus root to the pan. Sauté till the lotus root turns golden brown.
7. Remove the ingredients from the pan with a sieve to drain the oil.
8. Place them on a plate and sprinkle with spring onion. Do not fry the spring onion with the rest of ingredients, you will get more flavour and scent.
9. Squeeze lime on top and enjoy your Thai style snack!
You can eat all the crispy herbs, and will find this dish full of taste and texture x
